Cooking a quick French dinner for Spanish friends



Our Spanish friends Rosabel and Rafa came for dinner last saturday and
I wanted to surprise them with a typical French dish, a coq au vin....alas,
I ran out of time and had to do something much much quicker.
First we had a salade au chèvre chaud (warm goat cheese on salad) and then a spinach,
lardons and cheese quiche. Not very original but making a quiche is the first thing
which comes to my mind when time is scarce and you still have something decent
to present on the table.
When I lived in Paris, I think I must have tried dozens of versions of quiche recipes !

Nos amis espagnols Rosabel et Rafa sont venus dîner samedi dernier et
je voulais leur faire la surprise d'un plat typiquement français, un coq au vin....
mais hélas, j'ai manqué de temps et ai dû préparer quelque chose de beaucoup plus rapide.
En entrée, nous avons eu une salade de chèvre chaud, puis une quiche aux épinards,
lardons et fromage. Pas très original mais la quiche est la première chose qui me vient
à l'esprit lorsque je suis à court de temps et puis au moins, c'est toujours un plat
présentable. Lorsque j'habitais à Paris, je crois que j'ai dû au moins essayer
des douzaines de recettes de quiche !




We are having nothing but rain these days with luckily a little bit of sunshine in between.
Rain is good because it's likely it won't rain until next month and then next october.
I can still hear the birds singing in the patio, though.
Monchéri took those pics of me, making up the salad in the kitchen.
I'm wearing my blue toile Campagne apron which is my  favorite one.

Nous avons pas mal de pluie ces jours-ci avec heureusement une éclaircie de temps en temps.
Mais c'est bien qu'il pleuve parce qu'il ne risque pas de pleuvoir avant le mois prochain
et ensuite octobre prochain. On peut toujours entendre les oiseaux chanter le matin, dans 
le patio pourtant. 
Monchéri a pris ces photos de moi en train de préparer la salade dans la
cuisine. 
Je porte mon tablier Campagne en toile de Jouy bleue qui est mon préféré.


 I must tell you a very amusing story about this apron. Some months ago, I got
a phone call from a friend of a friend. She tells me she saw one of my aprons worn
by a restaurant owner here in the valley. She asks me if she can come right now
to my workshop to buy me one. Of course, I say yes. She comes with her lovely daughter
who is an actress in London. They both have a look at the aprons
and decide to buy the blue toile one (the one I wear on the pics).
We then go upstairs into the house and we stop in the kitchen where
Monchéri was baking an orange cake.

Il faut que je vous raconte une histoire très amusante à propos de ce tablier.
Il y a quelques mois, je reçois un appel d'une amie d'une amie. Elle me dit qu'elle
a vu un de mes tabliers portés par la propriétaire d'un restaurant ici dans la vallée.
Elle me demande si elle peut passer tout de suite à mon atelier pour m'en acheter un.
Bien sûr, je dis oui. Elle vient avec sa fille qui est très mignonne et qui est actrice à
Londres. Elles regardent les tabliers et se décident pour le bleu en toile de Jouy.
(celui que je porte sur les photos). On monte les escaliers pour aller dans la maison
et on s'arrête dans la cuisine où Monchéri est train de faire un gâteau à l'orange.



We have some casual conversation. The mother tells me the blue Campagne
apron is a gift for a friend who loves cooking. And her daughter says : 
oh I'm sure Nigella will love it ! And I immediately thought, oh but it can't be 
that Nigella....so of course I had to ask...they both laughed and said, yes it's
for this Nigella ! So imagine my joy thinking, mon Dieu, Nigella Lawson is
going to wear one of my aprons ! That said, I never dared to ask if she liked it
or if she actually wears it.....I'm just happy with the thought of it...

On parle de choses et d'autres. La mère me dit que le tablier bleu Campagne
est un cadeau pour une amie qui adore cuisiner. Et sa fille ajoute :
oh, je suis sûre que Nigella va adorer ! Et tout de suite, j'ai pensé, non...
ce n'est pas cette Nigella....et bien sûr, j'ai dû leur posé la question....
elles ont ri et m'ont dit ...si c'est bien la fameuse Nigella ! Vous imaginez
ma joie, mon Dieu à l'idée que Nigella Lawson porte un de mes tabliers !
Bon, ceci dit, je n'ai jamais osé demandé si le tablier lui avait plu ou 
même si elle le portait.....Rien que l'idée m'enchante....


 But back to our dinner last saturday with Rosabel and Rafa. Those two are serious
gourmets. They are our gastronissimo friends. They like to travel in Spain and
discover the best chefs. Some time ago, they told us about their experience
at El Bulli, I was all green with envy because El Bulli closed a couple of years ago and
I never had the chance to go.
When our friends arrived, I told them laughing that in the end my dinner was more
of a picnic style than the gourmet style I had intended but at least
the dessert was more elaborate.

Mais revenons à notre dîner de samedi avec Rosabel et Rafa. Ces deux-là sont 
de sérieux gourmets. Cec sont nos amis gastronissimo. Ils aiment voyager à travers
l'Espagne et découvrir les meilleurs chefs. Il y a quelque temps, ils nous ont raconter
leur expérience à El Bulli et j'étais morte d'envie parce qu'El Bulli a fermé ses portes,
il y a deux ans et je n'ai jamais eu l'occasion d'y aller.
Lorsqu'ils sont arrivés, je leur ai dit en riant qu'au final mon dîner était plus
style pique-nique que gourmet mais qu'au moins le dessert était plus élaboré.

 I made a moka cake. It is by far one of my favorite of all favorites. At my parents
home in France, we used to have it for special occasions. It was either fraisier or moka,
but I always preferred the taste of coffee and hazelnuts mixed with a subtle aroma
of rum. Thanks to Pierre Hermé's Larousse des desserts, after 2 years of training,
and fits of despair because I failed the butter cream, today I can honestly declare
that at last, I master the butter cream and make a good moka.
And for me, the best compliment is when my friends had their first bite
and went : mmmmmm..... This tells you all !

J'ai fait un moka. C'est de loin mon dessert  préféré de tous les préférés.
À la maison, chez mes parents en France, c'était le dessert des occasions
spéciales. C'était soit fraisier ou moka, mais j'ai toujours préféré le goût du
café et des noisettes et de l'arôme subtil de rhum. Grâce au Larousse des
desserts de Pierre Hermé, après 2 ans d'entraînement et des crises de désespoir
parce que je râtais la crème au beurre, aujourd'hui, je peux honnêtement déclarer
qu'enfin, je maîtrise la crème au beurre et suis capable de faire un bon moka.
Et pour moi, le meilleur compliment c'est quand mes amis se sont exclamés :
mmmmmm...... à la première bouchée. C'est le verdict final !


The moka cake is easy to prepare...IF you do it step by step. It is basically
a sponge cake called Joconde biscuit (which is also the base for the Opéra cake)
alternated with a coffee butter cream and hazelnuts. I think it does
require a bit of training but it is well worth the effort.

The Joconde biscuit is impregnated with a rum flavored syrup.
I used an old rum made here on the coast in Salobreña. Did you know
that there are a couple of rum factories on the southern Spanish coast ?
There used to be a huge sugar cane plantation in Salobreña which alas is no more.

Le moka est facile à préparer.....SI vous le faites par étape. C'est tout simplement
un biscuit Joconde (type génoise qui est aussi la base de l'Opéra) alterné
avec une crème au beurre au café et des noisettes. C'est un gâteau
qui demande un peu d'entraînement mais il en vaut la peine.

Le biscuit Joconde est imprégné d'un sirop au rhum. J'ai utilisé un vieux rhum
fabriqué ici sur la côte à Salobreña. Savez-vous qu'il y a deux fabriques de
rhum ici sur la côte en Andalousie ? Autrefois, il y avait une plantation
immense de canne à sucre à Salobreña qui hélas n'existe plus.




So, I love moka. I remember crying when I first had it right. Monchéri was very amused
because he could see how serious I was about making a good moka cake.
Anyway, here below you have the recipe with a few tips from my own experience,
so I hope you will try and make it.....

Donc, j'adore le moka. Je me souviens d'avoir versé une petite larme de joie quand 
je l'ai réussi pour la première fois. Monchéri était très amusé de voir à quel point,
je prenais cette affaire très au sérieux.
Vous trouverez la recette plus bas avec quelques conseils tirés de ma
propre expérience. J'espère que vous serez tentés de vous lancer !


Recipes

Salad with warm goat cheese

Mixed lettuce leaves and mâche
Cherry tomatoes
Bacon
Goat cheese log
Bread

Place the lettuce leaves and the mâche salad in a plate. Cut the tomato cherries in half and put on salad. Cut the bread in slices. Cut 1 cm thick goat cheese log. Place the cheese slices on the bread slices. Put in the oven under the grill, until bread is toasted and cheese is melt. In the meantime, fry the bacon in a frying pan until it sizzles and is crisp. 
In a bowl, make a vinaigrette with a spoon of balsamic vinegar, two spoons of olive oil, salt & pepper. I like to add a bit of soy sauce to make it a tiny bit sweet.
Pour the vinaigrette on the salad then place the toasted bread with cheese on top.

Quiche with spinach, lardons and cheese

For 4/6 persons

a roll of puff pastry (ready-made)
500g of spinach leaves
150g of lardons
100g of grated emmental cheese
3 eggs
25 ml of liquid cream
black pepper
a pinch of salt
nutmeg powder

Spread the puff pastry. Line a circular tart mold with baking paper. Place the pastry into the mold. 
Cook the spinach leaves in a pan with very little water for a few minutes. In a recipient, put the eggs, the lardons, the grated cheese and the cooked spinach. Mix well then add the liquid cream. Whisk and add black pepper, a pinch of salt (not too much because the lardons are salted) and a bit of nutmeg powder. Pour the preparation into the mold on the pastry.
Put in the oven and bake for 15 mn/20 mn at 200 °C until the puff pastry is golden and the quiche is swollen. 

Moka (Recipe of Pierre Hermé)

650g of biscuit Joconde
 60g of ground hazelnuts
600g of coffee butter cream
150g of ground hazelnuts

For the syrup

130g of sugar
100 cl of water
 80g of rum



Biscuit Joconde

makes 500g of biscuit (the recipe says you need 650g but it is sufficient)

30g of very fine flour
20g of butter
50g of ground almonds
50g of ground hazelnuts
100g of icing sugar
3 whole eggs
3 egg whites
15g of sugar

Sift the flour above a bowl. Melt the butter and leave it to cool.
Mix in another bowl the ground almonds and hazelnuts and the icing sugar. Add 2 whole eggs, one by one.
Whisk energetically manually or with an electrical mixer. It is important to let as much air into the preparation and it must double of volume.
Then add the 3rd egg and keep whisking 5 mn more.
Pour a bit of melt and cold butter. Mix well and add the remaining butter.
Make a meringue : beat the egg whites until stiff peaks then add the sugar gradually.
Add a bit of meringue to the first preparation to make it lighter. Then add the rest of the meringue with a wooden spatula, then the flour little by little.
Preheat the oven at 180°C. Line a circular mold (20 cm of diameter) or a rectangular mold (20 x 30 cm) with a baking sheet. Pour the biscuit and bake in the oven for 35 mn.
Unmold the biscuit on a plate, cover with a clean tea towel and place in the fridge.

Note and tips : In the first step, it is very important to whisk energetically to create bubbles of air. 
The more air enters the preparation, the more the biscuit will raise.

Coffee butter cream

makes 500g of butter cream  (the recipe says you need 500g but if you have 500g of biscuit, then it's enough)

250g of very soft butter
5 cl of water
140g of sugar
2 whole eggs
2 egg yolks
10g of instant coffee

Work the butter with a wooden spatula in a recipient until it gets very creamy.
Pour the water in a little pan. Add the sugar. Bring it to a boil. Cook until you reach a temperature of 120°C. 
Put the whole eggs and the egg yolks in a recipient. Whisk with an electrical whisk until foaming.
When the syrup is ready, pour thinly into the eggs without ceasing to whisk at low speed.
Keep whisking until the mixture is cold.
Then, add the butter without ceasing to whisk. 
Dissolve the instant coffee in very little water then add to the butter cream.
When the cream is smooth and homogeneous, put in the fridge.

Tips : the butter must be very soft and at same temperature than the egg+syrup preparation.
Several times, when I added the butter, the preparation would suddenly be lumpy. The trick is to place it onto a bain-marie and whisk it incessantly until it gets smooth, then place in the fridge for 1h and beat again to make it thicker.

Rum syrup

130g of sugar
100 cl of water
 80g of rum

Put the sugar and the water in a pan. Bring to a boil. Leave it to cool and add the rum.

Mounting of the moka cake

Cut the biscuit in 3 disks across the width. 
Divide the butter cream in 5 parts.
With a brush, impregnate the first circle of biscuit with the rum syrup.
Cover with one 5th of the butter cream and scatter one quarter of the ground hazelnuts.
Put the second disk of biscuit on top and repeat the same operation.
Then put the third disk and repeat the same operation.
Cover the whole cake with butter cream and with the remaining hazelnuts.
Place in the fridge for 2h and serve very cold.

Recettes

Salade au chèvre chaud

Mélange de feuilles de chêne et mâche
Tomates cerises
Bacon
Rouleau de fromage de chèvre
Tranches de pain


Placer les feuilles de salade sur une assiette. Couper les tomates cerise en deux et poser sur les feuilles de salade. Couper des tranches de pain. Couper des rondelles de fromage de chèvre d'une épaisseur de 1 cm. Poser les rondelles de fromage sur les tranches de pain. Mettre sous le grill du four jusqu'à ce que les tranches de pain soient dorées et le fromage fondu. Pendant ce temps, faire frire le bacon dans une poêle jusqu'à ce qu'il soit croustillant.
Dans un bol, faites une vinaigrette avec 1 cuillère à soupe de vinaigre balsamique, 2 cuillères d'huile d'olive, sel et poivre. J'aime bien ajouter un peu de sauce de soja pour un côté un peu doux.
Verser la vinaigrette sur la salade puis poser les tranches de pain toastées avec le chèvre chaud par dessus.


Quiche aux épinards, lardons et fromage

Pour 4/6 persones

un rouleau de pâte feuilletée (toute prête
500g de feuilles d'épinard
150g de lardons
100g d'emmental râpé
3 oeufs
25 cl de crème liquide
poivre noir
une pincée de sel
noix de muscade en poudre


 Etirer la pâte feuilletée au rouleau. Recouvrir un moule à tarte avec du papier sulfurisé. Garn ir le moule.  Faire cuire les feuilles d'épinard dans une casserole avec trè peu d'eau pendant quelques minutes. Dans un récipient, mettre les oeufs, les lardons, le fromage et les épinards cuits. Bien mélanger et ajouter la crème liquide. Mélanger et ajouter le poivre, une pincée de sel (pas plus parce que les lardons sont salés) et un peu de noix de muscade en poudre. Verser la préparation dans le moule sur la pâte.
Enfourner pendant 15 mn/20 mn à 200°C jusqu'à ce que la pâte soit dorée et que la quiche soit gonflée.


Moka (Recette de Pierre Hermé)

650g de biscuit Joconde
 60g de noisettes en poudre
600g de crème au beurre au café
150g de noisettes broyées

Pour le sirop

130g de sucre
100 cl d'eau
 80g de rhum



Biscuit Joconde

pour 500g de biscuit (la recette dit qu'il faut 650g mais c'est suffisant)

30g de farine très fine
20g de beurre
50g d'amandes en poudre
50g de noisettes en poudre
100g de sucre glace
3 oeufs entiers
3 blancs d'oeuf
15g de sucre

Tamiser la farine au-dessus d'un bol. Mélanger le beurre et laisser refroidir.
Dans un autre bol, mélanger les amandes et les noisettes en poudre avec le sucre glace. Ajouter les 2 oeufs entiers.
Battre énergétiquement à la main ou au batteur électrique. Il est important d'incorporer le plus d'air possible dans la préparation et il doit doubler de volume.
Puis ajouter le 3ème oeuf et continuer à battre encore 5 mn.
Verser un peu de beurre fondu et froid. Bien mélanger et ajouter le beurre restant.
Faire une meringue : monter les oeufs en neige puis ajouter le sucre graduellement.
Ajouter un peu de meringue à la première préparation pour l'alléger. Puis ajouter le reste de la meringue avec une spatule en bois, puis ajouter la farine peu à peu.
Préchauffer le four à 180°C. Recouvrir de papier sulfurisé un moule circulaire de 20 cm de diamètre ou un moule rectangulaire (20 x 30 cm). Verser la pâte à biscuit dans le moule et mettre au four pendant 35 mn.
Démouler le biscuit sur un plat, couvrir avec un torchon propre et mettre au frigo.

Conseils : Dans la première étape, il est très important de battre énergétiquement pour créer des bulles d'air. Plus il entre d'air dans la préparation, plus le biscuit sera gonflé.

Crème au beurre au café

pour 500g de crème au beurre (la recette dit qu'il faut 500g mais si on a 500g de biscuit, c'est suffisant)

250g de beurre très mou
5 cl d'eau
140g de sucre
2 oeufs entiers
2 jaunes d'oeuf
10g de café instantané

Travailler le beurre avec une spatule en bois pour qu'il devienne crémeux.
Verser l'eau dans une petite casserole. Ajouter le sucre. Faire bouillir. Cuire jusqu'à atteindre une température de 20°C.
 Mettre les oeufs entiers et les jaunes d'oeuf dans un récipient. Battre avec un  fouet électrique jusqu'à ce que le mélange devienne mousseux. Lorsque le sirop est prêt, verser en mince filet sur les oeufs sans cesser de battre à petite vitesse.
Continuer de battre jusqu'à ce que le mélange refroidisse.
Puis, ajouter le beurre sans cesser de battre.
Dissoudre le café instantané dans très peu d'eau puis incorporer à la crème au beurre.
Lorsque la crème est lisse et homogène, mettre au frigo.

 Conseils : le beurre doit être très mou et à la même température que le mélange oeufs + sirop.
Plusieurs fois, lorsque j'ajoute le beurre, la préparation devient soudainement grumeleuse. L'astuce est de placer la préparation sur un bain-marie et de battre sans cesse jusqu'à ce que la crème redevienne lisse. Puis placer dans le frigo pendant 1h et battre de nouveau pour épaissir la crème.

Sirop au rhum

130g de sucre
100 cl d'eau
 80g de rhum


Mettre le sucre et l'eau dans une casserole. Faire bouillir. Laisser refroidir et ajouter le rhum.


Montage du moka

 Couper le biscuit en 3 disques.
Diviser la crème au beurre en 5 portions.
Avec un pinceau, imprégner le premier disque de biscuit avec le sirop au rhum.
Couvrir avec 1/5ème de la crème au beurre et disperser 1 quart des noisettes.
Placer le second disque de biscuit par dessus et répéter la même opération.
Recouvrir le tout de crème au beurre et avec les noisettes restantes.
Placer dans le frigo pendant 2h et servir très froid.
